We all love a sneaky dessert (especially at night with a cuppa), but it can be hard to find desserts that won’t leave us feeling guilty! Incoming healthy, yes healthy, Lemon Cheesecake Bars!
Developed by The Lady Shake nutritionist, Georgia Wendt Nutrition, these bars promise to taste incredible, help with the sugar cravings and won’t leave you feeling guilty!
Ingredients
- 100g cottage cheese
- 355g light cream cheese
- 2 scoops of The Lady Shake Vanilla
- 1 egg, whisked
- 1/2 cup powdered sweetener
- Zest of 1/2 lemon
- Squeeze of lemon juice
- 1/2 tsp vanilla essence
- 1 scotch finger, crushed
Instructions
- Preheat oven to 180 degrees
- In a mixing bowl, combine all ingredients except the scotch finger
- Beat with an electric mixer until smooth
- Pour into a baking tin lined with baking paper
- Oven bake for 25-30 minutes. Allow to cool, then refrigerate 1 hour before cutting into 8 bars
- Top with the crushed scotch finger
