Ingredients
- 10 eggs (6 eggs, 4 whites)
- 3 cubes frozen spinach (or 75g thawed)
- 100g lean ham (diced)
- 1/2 cup reduced-fat cheese (grated)
- 1/4 cup milk
Method
- Preheat oven to 180 degrees
- In a bowl mix eggs, egg whites and milk till fluffy then add cheese and ham
- Thaw spinach in the microwave for approx. 2 minutes and squeeze the juice out before adding to the bowl
- Stir all the ingredients together
- Grab a non-stick frypan and spray with oil (put baking paper on the bottom so it doesn't stick)
- Pour ingredients in and cook for approximately 30 minutes (or until golden)
- Stick your knife in the centre and pull it out checking to see if the egg sticks to it (if the egg sticks it's not cooked enough)
- Cut, serve and enjoy!
