Now here is a delicious way to pack in your veggies and protein! Our stuffed capsicums are a nutritious, crunchy meal that is perfect for lunch boxes or as a single-serve dinner. The best part? This tasty twist on meat and veg has an amazing 27 grams of protein per serve!
Ingredients
- 4 large capsicums (red, yellow, green – whatever you prefer!)
- 1 tablespoon of coconut oil
- 600 grams of lean beef mince
- 1 brown onion
- 1 large carrot
- 2 cups of Basmati rice
- 1 large tomato
- 1 cup of baby spinach
- 2 garlic cloves
- 1 teaspoon of fresh parsley
- ½ teaspoon of salt
- ½ teaspoon of pepper
- ½ teaspoon of chilli flakes (optional)
- 1 tablespoon of paprika
Method
- In preparation, cook your basmati rice and set it on the side.
- Prepare your vegetables by chopping your spinach, slicing your mushrooms, chopping your tomato, peeling and dicing your carrot and finely dicing your onion and garlic.
- Slice the tops off your capsicum (put your tops to the side for later) and with a spoon scoop out all of the seeds, then place your capsicums on a baking dish
- Pre heat the oven to 200 degrees.
- Add oil to a pan, and put in your onion and garlic, once brown, add your salt, pepper, paprika and chilli flakes.
- Add the mince, and once brown and broken up, add the carrot and stir through.
- Once the mince and carrot is cooked through, add your rice and stir through.
- Add your mushrooms, spinach, tomato and parsley.
- Once cooked through, spoon the mixture into your capsicums.
- Before you pop the capsicums in the oven, pour ¼ cup of water into each capsicum to ensure they don’t dry out whilst baking.
- Add the tops to the capsicums, and bake for 30-40 minutes until cooked through.
- Serve and enjoy!
