Choc Orange Muffins

A light, moist and super fluffy choc orange muffin makes an ideal morning tea snack. Protein-packed, low in sugar, and guilt-free at only 156 calories each.
Ingredients
- 200g Vetta Smart Protein plain flour or oat flour
- 30g The Lady Shake Vanilla
- 1/4 cup Natvia sweetener
- 1/2 tsp baking powder
- 2 eggs
- 70g Nutelex or light butter, melted
- 1/3 cup almond milk
- 1/2 cup orange juice
- Zest of 1 orange
- 100g plain Greek yoghurt
- 1/3 - 1/2 cup reduced sugar chocolate chips
Method
- Preheat oven to 180°C
- In a mixing bowl, combine flour, The Lady Shake, Natvia sweetener, and baking powder
- Stir in the eggs, milk, orange juice, zest, melted butter and yoghurt and mix well
- Fold in the chocolate chips
- Pour batter into a 6 whole muffin tin either greased or a silicone muffin pan
- Bake in the oven for 20-25 minutes
